Butternut Squash

I bought a butternut squash awhile ago and it has been sitting on my counter waiting to be cooked and for the deliciousness to be discovered.

Kieran can hardly wait to try squash, just ask him.

To prepare the butternut squash:

1. Preheat the oven to 400 degrees.

2. Cut the squash in half lengthwise and remove the seeds from the round area.

I didn't do the best job cutting equal halves, but it still worked fine.

3. Place meat side down in about 1-2 inches of water.


4. Cook for about 40 minutes or until outside skin is wrinkly and starts to fold in.


5. Remove from water and let cool for 30 minutes or whenever it is cool enough to handle.


6. Remove outside skin and place "meat" in a food processor.



7. Hit puree and wait for the magic to happen.


8. Once the squash is pureed put in 1-ounce containers and freeze. Squash freezes well for about 3 months.
